I finished off the second safari taking a waterbuck. A waterbuck wasn’t on the list but after getting to see these cool animals for the first time on this hunt and seeing them multiple times during the safari set it in stone that if we got a good chance to take a bull we would take it and on one of last afternoon the opportunity presented its self. You’ll read a lot about how oily a waterbuck is and see comments that they tastes bad because of it, personally I believe that’s a myth it’s all about the field care and preparation of the meat just like anything else. Waterbuck makes a fine meal mixed in with all the proper fixings you get on Safari.
